At 1,800 masl, under dense shade and rich volcanic soil, Bourbon matures slowly, developing extraordinary sweetness and refined complexity. Producer Jamison Savage applies a clean washed process to highlight the variety’s natural clarity and structure.

We’ve roasted it ultra-light to let the nuances shine. Expect juicy red fruits, crisp orange peel, and a delicate citrus acidity, vibrant, elegant, and true to its origin.
