Processing
Iridescence undergoes a meticulous washed carbonic maceration protocol:
1. Cherries are harvested at peak ripeness and immediately de-pulped
2. Fermented in sealed CO₂-rich tanks for ~100 hours, with precise control over pH and temperature
3. After fermentation, beans are washed and dried on shaded African beds to prevent heat exposure
4. Once dried to 10.5–11% moisture, the coffee is rested in hermetically sealed bags for 60–90 days
5. Final milling includes sorting by size and density to ensure only the best beans are selected
The result is a coffee that showcases floral purity, crisp acidity, and elegant complexity.
