This coffee is a snapshot of place, grown on a multi-generational family farm in the mountains of Palestina, Huila, where seven siblings now carry forward a 60-year legacy. The Central de Beneficio wet mill serves as the heart of the farm, where careful harvesting and traditional methods meet extended fermentation and clean processing.
This Pink Bourbon was handpicked at peak ripeness, floated to remove defects, then fermented for 48 hours in open tanks at cool temperatures (around 15°C). It was then washed and dried slowly for 25 days before a resting period of 12 days to stabilize the lot.
We’ve roasted it ultra-light to let the nuances shine. Expect a structured, clean cup with delicate fruit sweetness, lifted acidity, and the calm elegance typical of washed Pink Bourbon from Huila.
