At Still, we celebrate coffees that push boundaries, and HP001 is a shining example. This exceptional lot marks our first-ever Chinese coffee, sourced from the Happenstance Estate in Yunnan, China. It was originally selected as the backup coffee for the Chinese competitor at the World Barista Championship in Busan, South Korea—a testament to its remarkable quality and unique character.

HP001 is a Catimor variety, carefully cultivated in the highlands of Yunnan, where rich soils and a unique microclimate nurture its complexity. This coffee undergoes a winey process, which enhances its deep, fruit-forward flavors and structured acidity. The result? A cup that is both vibrant and elegantly layered.
