This coffee is a snapshot of place , grown at 1,780 masl on Finca Las Flores, a family farm known for its innovation and award-winning cultivars. Now run by brothers Johan and Diego Vergara, the farm combines tradition with cutting-edge processing to showcase the full potential of each variety.
This Red Bourbon underwent a multi-stage fermentation process, including 60 hours of anaerobic fermentation, oxidation, submerged fermentation, and a 55°C thermal shock. The result is a deeply sweet, fruit-laden cup with a smooth structure and vibrant complexity.
We’ve roasted it light to let the nuances shine. Expect yellow banana candy, cherry, and caramel up front, with layers of sweet chocolate and tropical fruits rounding out a rich, layered finish.
