Processing
Spectrum undergoes a carefully controlled carbonic maceration process:
1. Whole cherries are sealed in CO₂-rich fermentation tanks for ~100 hours
2. Temperature and pH are continuously monitored for precision control
3. Cherries are then fully washed, removing skin and pulp
4. Three-stage shaded drying protects the beans from heat and sunlight
5. Once at 11% moisture, the coffee is rested in sealed bags for several weeks to stabilize
6. Final milling includes sorting by size, density, and color for uniformity
This method preserves delicate aromatics while enhancing sweetness and structure.
Cup Experience
Spectrum is vibrant and balanced, with layers that unfold as the cup cools.
Expect jasmine florals and tropical fruits upfront, followed by red grape and nectarine tones with a crisp acidity.
