This coffee is a snapshot of place, grown on Finca Milán in the hills of Calarcá, where native shade trees and nutrient-rich soils support slow, even cherry development. Julio César Madrid and the Café Uba team crafted this Castillo lot using their “Maypop” culturing protocol: a 48-hour oxidative fermentation in cherry, followed by bioreactor fermentation with grape, passion fruit, and passion fruit distillate to enhance aromatic clarity and sweetness.
We’ve roasted it ultra-light to let the nuances shine. Expect grapefruit juice, orange zest, white grape and citrus, a juicy, zesty cup with bright structure and balanced sweetness.
