Only cherries scoring 80 percent and above on the cherry board and measuring at least 17° Brix are accepted, ensuring optimal ripeness and sugar concentration. The cherries undergo a 96-hour sealed barrel fermentation before pulping. The parchment is then inoculated with 20 percent PK1 yeast and fermented in open tanks for an additional 48 hours to build structure and aromatic clarity. After fermentation, the coffee is eco-washed and dried slowly under shade to 11 percent moisture, with continuous hand-sorting and rotation to maintain uniformity. The lot is then rested in the temperature-controlled warehouse prior to milling and export, allowing the profile to stabilize and refine.
